Easy, Versatile and American Made

I want to introduce you to one of my favorite kitchen ESSENTIALS! The Palmer Electric Sandwich Maker. This thing is a gem! You can make two toasted sandwiches or mountain pies, as we like to call them, simultaneously while in the comfort of your kitchen (or camper, or horse trailer, or anywhere you have electricity).

It is so easy to use, you only need to plug it in and gather your favorite ingredients! Personally, I love pizza mountain pies ( read Dinner Over an Open Fire blog).

Another tasty option is BBQ Chicken!

Ingredients:

- Cooked Chicken (I keep small bags of pulled chicken in our freezer to make mountain pies, dips or pizzas. You can also use cook some chicken breasts and cut into chucks, use left over chicken from last nights dinner, or canned chicken)

- Your FAVORITE BBQ sauce (We love Hickey Bottom BBQ sauce and Sweet Baby Rays)

- Sliced bread

- Spray butter

- Cheese, Bacon bits, or anything else you love on a chicken sandwich

Simply butter one side of your bread and place on the iron. Add your cooked chicken, BBQ sauce and any extra toppings you desire. Top with another slice of bread, butter side up. Close the iron. There isn't a timer on the irons since everyone likes their sandwich toasted a little bit differently. Just check your mountain pie every few minuets until its perfect for you! You will notice if you make several they will cook at little faster than your first batch, just keep this is mind so you don't burn them.

I love to use my iron at barrel races, I can have a quick, hot meal right in my trailer with minimal prep work and mess! We also love it to use it at our camp for a quick lunch; we can turn out tons of mountain pies to feed everyone pretty quickly even if the fire isn't ready to cook on.

* Note, my iron is several years old and has created many, many mountain pies. The new version does not have the raised part in the middle to mark the bread.
